I work for a little pizzeria & our boss is a genius. He makes the best pizza I have ever tasted but his storefront is super small. When he opened his supplier he could not afford honestly much in square footage. So his supplier holds the family room & only many tables. So most of the money had to come from deliveries. The pizza is wonderful enough & word of mouth spread to where people come in again & again. People have mentioned him getting a bigger store for his food. My boss says that he will never do that. He does not want to pay more for electric, plumbing, heating & cooling. Right now he only has a bathroom for the employees & the AC is in the back. We get cooling for making the pizzas & not the front tables. We don’t even need heating in the Wintertide because of the ovens. Nobody sits at the tables anyway, so why waste the AC or heating? His utility costs are dirt cheap & with a bigger building that would change. He would need to add many more bathrooms for the public & have Heating & Air Conditioning equipment extend to the dining area. He would need both heating & cooling too. Heating & Air Conditioning is not exactly cheap & neither is plumbing. So our boss always tells people he is not there yet financially. The small supplier is making him way more money than a large pizzeria would. Who would have thought to cut out plumbing & Heating & Air Conditioning expenses with a pizzeria? This is so smart if you ask me.
